This is my first beardie, he's about 4 months old and not interested in veggies or anything besides crickets. Is that normal? If so, about when do they usually really start getting into trying new foods?

A lot of young ones weren't taught to eat greens from an early age, so it takes them a while to start. Just keep offering every day. It's more important for him to get protien right now, and he'll need more greens later on in life.

I bought little silk worms and put them under the salad to make it move and Boogie started eating them.  Tessie was taught early to eat them so no problem for her.

My baby beardie started off on Romane Lettuce at 2 months old and its still his absolute favorite veggie. Give it a try it's an easy one to hand feed to cause it breaks easily.

Please do not feed your dragon lettuce in any form. Follow the food chart - http://www.beautifuldragons.503xtreme.com/Nutrition.html - for healthy foods. The ones in green can be fed daily, the ones in black are for occasional treats in small amounts.
