Where do I start? are there any particular tiles I need to think about, do they need sealing? How do I cut them to the right size? I just have no idea where to start  Undecided

Most tiles I have seen come in a few different sizes.  12 x 12",  11 7/8 x 11 7/8
4 x 4, and the littler ones.  I got some really stunning slate in the 11 7/8" so I didn't have to cut at all.
As for cutting, you score the tile with a straight edge, and a ceramic cutting blade (I have used a flat blade screwdriver) set on the side of something firm, and Gently tap with a hammer until it breaks.  Then a pair of pliers to chunk off the uneven spots, wallah, tile cut.

As for a type of tile you usually want a sealed ceramic tile with enough texture for your BD to walk on but not too much so that if he poops in it it is hard to clean.
